Tofu Treat

If you’re like me, you stay away from meat. It happened to me about 15 years ago when I was pregnant with my firstborn. Anyhow, this transition in my world forced me to look to outside sources to find protein. This is of high importance to most diets but especially when your expecting. One of the items I found to add protein was tofu. How to cook tofu seemed difficult, but it wasn’t. I looked online to find some easy recipes and it worked! Tofu is versatile to be used with rice, pasta, and even with a simple vegetable dish.
